Aagri Prawns Masala Recipe Prawns Gravy This recipe is general and uses readily available items. I prefer a smoother gravy/masala since it adds texture to the meal and coats the prawns better. So I love to mix the sautéed onion and tomato masala. I use fresh prawns, but you can use fresh, frozen, or smaller/larger prawns. Make sure to devein, clean, and rinse them thoroughly before using them in the recipe, or buy them pre-cleaned at the shop.

How to choose Prawns Gravy
-
Check Freshness of Prawns
-
Fresh prawns should have a mild sea smell (not strong or fishy).
-
Firm texture, not soft or mushy.
-
Shells should be glossy and not slimy.
-
-
Select the Right Type of Gravy
-
Light Curry (onion–tomato based): Less oily, good for regular meals.
-
Coconut-based Gravy: Rich, creamy, goes well with rice (popular in South India).
-
Spicy Masala: Thick and flavorful, best for special meals with roti/naan.
-
-
Balance of Spices
-
Avoid gravies that are too oily or spicy, as it may cause acidity.
-
Choose recipes with turmeric, ginger, garlic, and coriander – they enhance taste and improve digestion.
-
-
Cooking Method
-
Steamed or lightly sautéed prawns are healthier than deep-fried ones.
-
Ensure prawns are cooked just right (overcooked prawns turn rubbery).
-
-
Pairing with Meal
-
With rice → thinner gravy (coconut or tomato base).
-
With roti/naan → thicker masala gravy.
